Description

Serve Filotea pappardelle with slow cooked, meaty sauces. The wide, flat strands trap the sauce so each mouthful is full of flavour. Toss the cooked pasta with a rich ragu made with beef or venison.

Pappardelle is also good with mushroom sauces or brown butter flavoured with sage.

Filotea pasta is slow dried and bronze drawn. This process gives it a rough, porous texture that helps sauces to cling. Once cooked, it has a silky mouthfeel with a little bite, just like fresh pasta.
