Description
Morelli’s Orecchiette is a traditional pasta shape from Puglia, southern Italy. The name means ‘little ears’, a reference to its ear-like shape. It’s typically paired with sausage and friarelli.
Once cooked, orecchiette has a firm, slightly chewy texture. Try tossing it with anchovies, garlic and toasted breadcrumbs. It’s also delicious with a rich tomato sauce. Top with basil and torn burrata for a meal worthy of an Italian trattoria.
Morelli pasta is bronze-drawn and dried slowly at low temperatures. This is the secret to the rough surface that helps sauces to cling.
Cooking time: 11 minutes.
Store in a cool and dry place, away from cereals.
